Banana Oatmeal Cookie: a Twist on Banana Bread

Oatmeal-Banana-Chocolate-Chip Recipe-Kids-Healthy-Snack-Baked CookieI want a cookie.  I want that warm, fresh-baked shape of a snack in my hand.  But I’m a utilitarian mom too, and I have 4 ripe bananas.  I could make banana muffins, but I make them weekly and I’m sick of washing out the pans.  Even on my most deliberate days, I spill batter in between the paper muffin liner and the muffin tray.

And then…as I stood staring at my bananas, my brain fired off an idea to alter my recipe.  I decided to omit the sugar (my bananas were really brown and I’m sure the sugar molecules had already tripled in potency), decrease the butter (since we have so much banana goo) and lower the flour (cuz I eat a lot of pretzels already!)  I gotta say, they were better than I could have hoped, and by the time I sat to write this blog post the next day, they were all happily consumed!!!  This easy to grab cookie-like item is healthy and sweet for spazzy, hungry kids or when I’m jonesin’ for a snack!

Melt 1/2 stick butter or 1/4 cup coconut oil

Smash in 4 whole bananas

Add 2 tsp Vanilla

Add 4 eggs

Add 4 packets Instant Oatmeal Maple or Cinnamon (this is the only sugar in the recipe!!!)

Add 1 cup wheat flour

Add 1 cup ground Almond Meal (from Trader Joes)

Add 2 tsps Baking Powder

Add 1 tsp cinnamon and 1/2 tsp salt

Mix all and dollop onto parchment paper-lined cookie sheet.

Bake 8-10 min shorter for smaller cookies and longer for larger cookies :-)

The 2nd round of cookies from this batter I added 1/4 cup dried cranberries, 1/4 cup chocolate chips and 1/4 cup walnuts and it was GOOD!!!
