Easy Blueberry Pancakes with fiber, protein & calcium!

Makes 12 cakes, 100 calories each.

My kids & I make breakfast on the weekends.  Our main objective is taste & health, & here’s what we came up with today!

1 1/2 cups Blueberry Pancake box mix
1/2 cup low fat milk
1 egg & 2 egg whites
1/4 cup ground flax seed
1/4 cup wheat bran
1/4 cup almond meal (Trader Joe’s)
Stir & dollop on griddle!

Tastes like blueberry muffins, really.  If you don’t have Blueberry Pancake Mix, you can use regular pancake mix & add fresh or frozen berries (but my kids don’t like hot blueberries in pancakes, they prefer the fake tidbits.)  We’ve used Blueberry Muffin mix too & it was really really good!  Now that I think of it, we could use any muffin mix & make muffin “cakes” for breakfast on the griddle.

I like starting with a box mix & adding more fiber (bran, ground nuts & flax), calcium (milk) and protein (eggs & nuts.)  Ground flax seeds also have Lignans, which are natural antioxidants & alpha-linolenic acid (plant version of Omega 3 oil.)  If you keep them zipped up in the fridge & they’ll last 6 months!

If you don’t buy the flax seed, wheat bran or almond meal, you could add 1/2 cup Oats for fiber (or 2 Oatmeal Packets would work) & then maybe 1/4 cup more of the mix.  Just keep adding until it’s the right pancake batter consistency!

We made some extra & froze ‘em for our busy school mornings.
