I’m all about easy, fun, tasty, sort-of-healthy, unique desserts. I buy boxed cake mixes when they’re on sale for $1 a box anytime I see them. So, having a yellow one on hand, and some sugar free lime Jell-O, I embarked on a new creation. Using milk and yogurt added calcium, protein, B2 and B12, magnesium, Vitamin D and “good” bacteria. (Keep in mind that the only yogurts that contain probiotics are those that say “live and active cultures” on the label.) An extra egg is more protein, all 9 essential amino acids, choline and naturally occurring vitamin D as well.
• 4 eggs
• 1 container (6 oz) yogurt (I used vanilla but I’m sure LIME yogurt would be better!)
• 1/2 cup oil
• 1/2 cup milk
• 1 box lime Jell-O
• 1 tablespoon lime juice (in squirty bottle – easiest!)
• 1 box cake mix (I used yellow but white would work I’m sure)
• 1 cup white chocolate chips
Generously spray cooking spray on bundt pan. Bake at 350 degrees for 45 minutes.
Cool for 2 hours in refrigerator.
Flip onto serving platter and serve with a dollop of Cool Whip or whipped cream! The white chocolate chips kind of sink down and carmelize a bit (which is the brown part of the photo). I give it 2 thumbs up and my kids loved it too!
